• ½ cup (56g) coconut flour
• 2 tbsp psyllium husk powder (NOT whole husks—texture will be gritty)
• 2 tsp active dry yeast (check expiration date!)
• 1 tbsp erythritol/monk fruit blend (plus 1 tsp for yeast activation)
• ½ tsp fine sea salt
The Soul:
• ¼ cup warm water (105–115°F / 40–46°C)
• 6 large eggs, room temperature
• ½ cup (113g) unsalted butter, melted + cooled
• 1 tsp vanilla extract (optional but recommended for sweet brioche)
For Finishing:
