No-Bake Pineapple Cheesecake

 

Transfer the mixture to a lightly buttered 9-inch springform pan. Spread evenly and press down firmly with the back of a spoon or the bottom of a clean glass, ensuring the surface is flat and compact. Pay particular attention to the edges, ensuring the sides are about 1/2 inch high.

Refrigerate the crust for 15-20 minutes to firm up before adding the filling.

Step 2: Prepare the cheese filling
In a large, deep bowl, beat the cream cheese with an electric mixer on medium speed until completely smooth and creamy, about 3-4 minutes. It’s essential that the cheese is at room temperature to avoid lumps.

Gradually add the granulated sugar, continuing to beat until the mixture is fully incorporated and has a silky consistency. Stir in the vanilla extract and beat for another minute to evenly distribute the flavor.

Add the mashed and well-drained pineapple to the cream cheese mixture. It’s essential that the pineapple is completely drained, pressing it gently with paper towels if necessary. Gently fold in the pineapple to combine the fruit without crumbling it too much.

Step 3: Prepare and incorporate the whipped cream
In a perfectly clean, chilled bowl, pour the cream and powdered sugar. Using a clean electric mixer, beat on high speed until soft but firm peaks form. The cream should hold its shape but still appear glossy and smooth.

Using gentle movements, fold the whipped cream into the cream cheese and pineapple mixture. Use a large spatula and make an upward motion, rotating the bowl to ensure thorough incorporation without deflating the cream.

Step 4: Assemble the cheesecake
Remove the crust from the refrigerator and carefully pour the entire filling mixture over it. Use a spatula to smooth the surface, creating an even layer and eliminating any air bubbles.

Gently tap the pan on the countertop to fully settle the filling. Cover with plastic wrap, making sure it doesn’t touch the surface of the cheesecake.

Refrigerate for at least 4 hours, though ideally overnight, to achieve the best texture and allow all the flavors to meld perfectly.

Step 5: Unmold and Serve
To unmold, run a thin, sharp knife along the edge of the pan to gently loosen the cheesecake. Carefully remove the springform pan ring.

Garnish as desired with fresh pineapple pieces, mint leaves, or a light drizzle of pineapple syrup. Serve immediately, chilled, for the best texture.
