Potato focaccia is a soft and delicious version of classic focaccia. The potatoes in the dough make it incredibly soft, and when cooked properly, it provides an irresistible crunch.
Ingredients:
500 g 00 flour
250 g potatoes (boiled and mashed)
300 ml warm water
50 ml extra virgin olive oil (plus extra for the surface)
10 g fine salt
1 teaspoon sugar
10 g fresh brewer’s yeast (or 3 g dry brewer’s yeast)
Coarse salt to taste
Fresh rosemary to taste
