BBQ PEPPER AND CHEESE CHICKEN
What you need: – Four skinless, boneless chicken breasts
You need to chop all three colors of peppers – red, yellow and green.
– Garlic, minced, 2 cloves
1 teaspoon paprika
1 tsp dried oregano
* Add salt and pepper to taste. * Cut 1 cup cheddar cheese into pieces.
– Three tablespoons olive oil – ½ cup grated parmesan
– Chopped fresh parsley to serve as a garnish
Instructions:
First, preheat the oven to 375°F.
Step 2: In a large bowl, combine the chicken breasts, olive oil, garlic, paprika, oregano, salt and pepper. Coat the chicken thoroughly, stirring to coat.
3. Mix the chicken with the chopped pepper.
4. Transfer the chicken and pepper mixture to a 9-by-13-inch baking dish. Spread evenly.
Arrange the chicken and peppers on a platter. Sprinkle with the shredded cheddar and grated Parmesan.
6. After 25 to 30 minutes in the oven, the chicken should be fully cooked and the cheese should be melted and bubbling.
7. Once baked, remove the dish from the oven and serve with chopped parsley.
