It’s worth having these jars in your pantry. This is an excellent spread for now and for the winter.
I serve this spread cold, especially with sandwiches, cold cuts, grilled meats, but also as an addition to rice, pasta, and even soups, sauces, or fillings. It’s worth preparing several jars for the winter, because they will certainly come in handy. Preparing this spread is not laborious, because basically all the vegetables are put through a meat grinder 😉. When there are plenty of vegetables in the garden, this spread is a great way to make sure nothing goes to waste 😉. This recipe yielded a fairly large portion: 10 jars of 200 ml and 4 jars of 370 ml.
Ingredients:
1.5 kg zucchini (preferably young)
1.5 kg bell peppers
1.2 kg tomatoes
0.8 kg carrots
0.8 kg onions
1 head of garlic
spices: 2 tablespoons of salt (or to taste), 2 tablespoons of sugar, 1 teaspoon of ground ginger, 1 teaspoon of cayenne pepper (optional), 1 teaspoon of Herbes de Provence, spices can be modified according to your taste
100 ml apple cider vinegar
