Step-by-step preparation
1. Prepare the base
Start by washing the potatoes thoroughly under cold water. If you prefer, you can also peel them, but leaving the skin on will make them even more rustic and crispy. Cut them into slices about 1 cm thick, trying to maintain a uniform thickness for even cooking.
2. Season the slices
In a small bowl, mix the olive oil with salt, pepper, sweet paprika, garlic powder, and dried thyme. Generously brush both sides of the potato slices with this mixture. It is this aromatic mix that will give the mini pizzas an irresistible aroma, even during cooking.
3. First cooking
Arrange the slices on a baking sheet lined with parchment paper, without overlapping them. Bake in a preheated oven at 180°C for 25 minutes, turning them halfway through cooking. They should be slightly golden and soft in the center: they will be your “pizza base”.
4. Top like a real pizza
Once baked, top them with a teaspoon of tomato sauce, some grated or cubed cheese, cherry tomato slices, and a few pieces of bell pepper. Add a sprinkle of oregano for the classic “pizzeria” touch.
5. Second cooking
Put them back in the oven for another 10-15 minutes, still at 180°C, just long enough for the cheese to melt and everything to be well flavored. The mini pizzas will be ready when they start to form a golden crust on top… a real treat!
