Beat the eggs and sugar
together. Using an electric mixer, beat the eggs and sugar until light and frothy. This is the secret to its smooth texture.

Add the liquids:
Pour in the oil (or melted butter) and milk at room temperature. Continue mixing until everything is well combined.

Incorporate the dry ingredients.
Add the sifted flour and baking powder, as well as the grated lemon zest (or vanilla). Gently fold from bottom to top to avoid deflating the batter.

Pour into the pan.
Grease and flour a 22-24 cm round cake pan. Pour in the batter and smooth the surface.

Bake in a
preheated oven at 180ยฐC for about 35 to 40 minutes. Check for doneness with a toothpick: if it comes out clean, the cake is done.

Decorate simply.
Once cooled, sprinkle with powdered sugar. No complicated frosting needed: a little is all it takes to rediscover your inner child.
