Preparation:
1. Preparing the meatballs: Mix all the ingredients well in a bowl. Add the ground beef, egg, breadcrumbs, finely chopped onion, crushed garlic, mustard, salt, pepper, and paprika. Knead everything until you have a smooth mixture and form small meatballs (about 2 to 3 cm in diameter). Heat a little oil in a pan and brown the meatballs on all sides. Once well browned, remove them from the pan and set them aside.
2. Preparing the stew: Heat the oil in a large saucepan and sauté the finely chopped onion until translucent. Then add the diced potatoes and sliced carrots. Sauté briefly to allow the flavors to develop. Deglaze the vegetables with the broth and bring everything to a boil. Once the broth is boiling, add the Brussels sprouts and simmer over medium heat for about 20 minutes, until the vegetables are tender.
